Rustic Inn's Incredible Wild Rice Meatloaf

If you're up on Minnesota's North Shore checking out Gooseberry Falls, be sure to schedule in a visit to Rustic Inn!  While best known for their pie (highly recommend raspberry cream pie and lemon angel pie), be sure to try their main courses. This wild rice meatloaf (served over mashed potatoes with gravy at the restaurant) was fantastic.  My meatloaf loving son claimed it's some of the best he's ever tasted!

Rustic Inn Wild Rice Meat Loaf

Ingredients:

1 LB. Ground Beef

1/2 LB. Italian Sausage

1/4 C. Honey

2 Eggs

1/4 C. Heavy Cream

1 TSP. Dijon Mustard

1 TBSP. Ketchup

1 TBSP. Salt

1 TSP. Pepper

3/4 C. Chopped Onions

3/4 C. Chopped Red Peppers

2 TBSP. Chopped Garlic

1 TBSP. Soy Sauce

1 TBSP. Worsteshire Sauce

2 C. Cooked & Cooled Wild Rice

Directions:
  • Saute chopped onions, peppers, & garlic in 1 Tsp. Olive oil.
  • Place all ingredients in a mixing bowl.
  • Mix until well blended.
  • Place in a greased Loaf Pan.
  • Cover with foil and bake @ 350 for approx. 60 min.
  • Uncover & Bake for 10 additional minutes or until Meatloaf reaches 160 Degrees.
  • Remove From Oven & Let Stand for 15 minutes before serving. Enjoy!
